  • 2 large heads of cauliflower
  • 8 ounces cream cheese
  • 1 cup sour cream
  • 2 cups shredded Colby Jack cheese
  • 8 slices bacon
  • 4 green onions
  • 2 cloves garlic
  • Salt
  • Black pepper
  • Paprika

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Steam cauliflower florets until tender (about 5-7 minutes), drain, and pat dry.
  3. In a mixing bowl, blend cream cheese, sour cream, 1 cup of Colby Jack cheese, half the crumbled bacon, half the green onions, garlic, salt, and pepper until smooth.
