  • 2 ⅓ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup light brown sugar, packed
  • ¾ teaspoon salt
  • ¼ teaspoon baking powder
  • 12 tablespoons unsalted butter, melted and cooled
  • 1 (14-ounce) can sweetened condensed milk
  • 4 large egg yolks, room temperature
  • 2 tablespoons heavy cream
  • ⅛ teaspoon salt
  • ⅔ cup fresh lemon juice (about 45 lemons)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. For the crust, mix flour, granulated sugar, light brown sugar, salt, and baking powder in a large bowl. Stir in melted butter until crumbly. Press two-thirds of this mixture into the bottom of the pan and bake for 15 minutes until lightly golden.
  3. Prepare the lemon filling by whisking together sweetened condensed milk, egg yolks, heavy cream, and salt in another bowl. Gradually whisk in fresh lemon juice until smooth.
  4. Pour the lemon filling over the baked crust and sprinkle with the remaining crumb mixture on top. Bake for an additional 15-20 minutes until golden brown and set.
  5. Allow cooling at room temperature before refrigerating for at least four hours before slicing into squares.
