- ½ cup light brown sugar, packed

- ¼ teaspoon baking powder
- 12 tablespoons unsalted butter, melted and cooled
- 1 (14-ounce) can sweetened condensed milk
- 4 large egg yolks, room temperature
- 2 tablespoons heavy cream
- ⅛ teaspoon salt
- ⅔ cup fresh lemon juice (about 4–5 lemons)
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- For the crust, mix flour, granulated sugar, light brown sugar, salt, and baking powder in a large bowl. Stir in melted butter until crumbly. Press two-thirds of this mixture into the bottom of the pan and bake for 15 minutes until lightly golden.
- Prepare the lemon filling by whisking together sweetened condensed milk, egg yolks, heavy cream, and salt in another bowl. Gradually whisk in fresh lemon juice until smooth.
- Pour the lemon filling over the baked crust and sprinkle with the remaining crumb mixture on top. Bake for an additional 15-20 minutes until golden brown and set.
