Ingredients
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar

- 32 ounces cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 4 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 10 ounces lemon curd
Instructions
- Preheat oven to 325°F (163°C).
- For the crust, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan and refrigerate.
- In a stand mixer, beat softened cream cheese until smooth. Gradually add sugar, then eggs one at a time. Mix in vanilla, lemon juice, and zest.
- Pour filling into the prepared crust and bake in a water bath for 1 hour and 30 minutes at 300°F (149°C).
