  • 8 oz unsalted butter (1 cup), melted
  • 19.25 oz lavender sugar (2 ¾ cups)
  • 8 large eggs
  • 1 ¼ cups fresh lemon juice
  • Zest of 2 lemons
  • 9 oz all-purpose flour (2 cups)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.
  2. For the crust, mix granulated sugar and dried lavender in a bowl. Stir in melted butter, vanilla extract, salt, and flour until combined. Press evenly into the prepared pan and bake for about 20 minutes until golden.
  3. For the filling, whisk eggs in another bowl; add lemon juice, lavender sugar, zest, and flour. Mix until well incorporated.
  4. Pour the filling over the baked crust and bake for an additional 40 minutes or until set.
  5. Allow to cool completely before slicing into squares.
