  • 1 cup fresh or frozen raspberries
  • 3 cups all-purpose flour
  • ⅔ cup warm dairy-free milk
  • ½ cup vegan butter
  • 3 tablespoons granulated sugar
  • 3 teaspoons instant dry yeast
  • Ground cinnamon and nutmeg
  • Optional glaze: ¼ cup granulated sugar, 2 tablespoons water

Instructions

  1. In a saucepan, combine raspberries, sugar, corn starch, and a splash of water. Boil then simmer until thickened.
  2. Line an 8-inch loaf tin with parchment paper.
  3. Mix dough ingredients in a stand mixer or bowl; knead until soft and elastic.
  4. Let the dough rise in a warm place for about an hour until doubled.
  5. Roll out the dough, spread cooled jam on it, roll into a log, cut in half lengthwise, twist together, and place in tin.
  6. Allow to rise again for about an hour; preheat oven to 340°F (170°C) and bake for 30–40 minutes.
