  • 1 cup buttermilk (or regular milk)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup honey
  • 1/2 cup unsalted butter, softened for honey butter
  • 1/4 cup honey for honey butter
  • 1/4 teaspoon salt (optional for honey butter)

Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8-inch square baking dish or cast-iron skillet.
  2. Cook sweet potato until tender, then mash and set aside.
  3. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, mix mashed sweet potatoes, buttermilk, melted butter, eggs, and honey until smooth.
  5. Combine wet ingredients with dry ingredients gently until just mixed.
  6. Pour batter into prepared dish or skillet and bake for 25-30 minutes until a toothpick comes out clean.
  7. While baking, prepare honey butter by mixing softened butter with honey until creamy.
