- 2 tablespoons butter
- 1 lb bone-in chicken thighs
- 3 celery stalks (diced)
- 2 medium carrots (peeled and sliced)
- 1/2 yellow onion (diced)
- 2 cloves garlic (minced)
- 8 cups chicken stock
- 12 ounces frozen egg noodles
- 1/2 tablespoon dried thyme
- 1/2 tablespoon dried basil
- 2 bay leaves
- 1/2 to 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large stock pot over medium heat, melt the butter. Season the chicken with salt and pepper, then add to the pot. Cook for 3 to 4 minutes per side until browned and remove.
- In the same pot, add celery, carrots, onion, and garlic; sauté for 3 to 4 minutes until softened.
- Pour in chicken stock and bring to a boil. Return chicken to the pot, reduce heat, and simmer for 25 to 30 minutes.
- After cooking the chicken through, remove it from the pot and bring broth back to a boil. Add frozen egg noodles and cook according to package instructions.
- Shred the warm chicken and return it to the pot before serving hot.
