Ingredients
- 2 boneless skinless chicken breasts
- 8 cups chicken broth
- 4 celery stalks (chopped)
- 4 whole carrots (peeled and chopped)
- 1/2 onion (diced)
- 2 cups egg noodles
- 1/4 teaspoon dried thyme leaves
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 bay leaves
- 2 cups water
Instructions
- In a large stock pot, combine chicken breasts, chicken broth, celery, carrots, and onions.
- Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer until the chicken reaches an internal temperature of 165°F (20–30 minutes). Remove chicken once cooked.
- Shred the cooled chicken into bite-sized pieces.
- Return shredded chicken to the pot and add thyme, garlic, salt, pepper, bay leaves, egg noodles, and water. Stir well.
- Cook over medium-high heat for about 10 minutes until the noodles are tender.
- Remove bay leaves before serving.
