Ingredients
- 2 medium English cucumbers (or regular)
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup feta cheese, diced or crumbled
- 1/2 small red onion, thinly sliced
- 1–2 cloves garlic, minced
- 1/2 cup fresh herbs (parsley, cilantro, mint)
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- Wash and dice the cucumbers into bite-sized pieces. Place them in a large mixing bowl.
- Add the chickpeas, red onion, feta cheese, garlic, and chopped herbs to the bowl.
