  • 1 ¾ cups whole wheat flour
  • ⅓ cup melted coconut oil
  • ½ cup honey or maple syrup
  • 2 eggs (or vegan substitute)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9” x 5” loaf pan.
  2. In a large mixing bowl, whisk together melted coconut oil and honey. Add in eggs, mixing until smooth.
  3. Stir in milk, baking soda, cinnamon, vanilla extract, salt, nutmeg, and grated zucchini.
  4. Gently fold in the whole wheat flour until just combined (some lumps are okay).
  5. Pour the batter into the prepared loaf pan and sprinkle with extra cinnamon if desired.
  6. Bake for 55 to 60 minutes until a toothpick inserted into the center comes out clean.
