Instructions

  2. In another bowl, combine melted coconut oil or butter, egg, and vanilla until mixed. Stir in maple syrup.
  3. Add the dry mixture to the wet ingredients and mix until combined. Fold in grated carrots gently.
  4. Chill the cookie dough for 30 minutes.
  5. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  6. Scoop rounded dough onto the sheet, flattening each slightly. Bake for 12-15 minutes until lightly golden.
  7. Cool on the pan for 15 minutes before transferring to a wire rack.
