Instructions

- Add the dry mixture to the wet ingredients and mix until combined. Fold in grated carrots gently.
- Chill the cookie dough for 30 minutes.
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- Scoop rounded dough onto the sheet, flattening each slightly. Bake for 12-15 minutes until lightly golden.
- Cool on the pan for 15 minutes before transferring to a wire rack.
