  • 1 red onion (cut into wedges)
  • 1 (20 oz) can pineapple chunks (drained, reserve juice)
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons pineapple juice
  • 1 tablespoon olive oil
  • Spices: garlic powder, ginger, red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine cubed chicken with bell peppers, onion, and pineapple chunks.
