Ideal for quick weeknight dinners or impressive summer gatherings, this recipe pairs beautifully with salads, grains, or roasted vegetables. With its healthy profile and meal prep-friendly nature, it’s a go-to for any occasion.

Ingredients

Scale
  • lbs boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 24 cloves garlic, minced
  • 1¼ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • 23 tablespoons acid of choice (lemon juice, lime juice, vinegar)
  • Optional: fresh herbs, crumbled feta cheese

Instructions

  1. Pound chicken to an even thickness (½ inch) for uniform cooking.
  2. Poke holes in the chicken and combine marinade ingredients in a zip-top bag. Add chicken, seal tightly, and massage to coat. Marinate for at least 30 minutes (up to 12 hours).
  3. Preheat grill to high heat (475°F). Clean and oil grates.
  4. Grill chicken smooth-side down for about 4–5 minutes; flip and cook until internal temperature reaches 155–160°F.
