  • 8 egg yolks
  • 1 cup cooked white rice
  • 1 cup diced cooked chicken
  • 1/4 cup margarine
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon ground white pepper

Instructions

  1. In a large pot, combine chicken broth, lemon juice, carrots, onion, celery, chicken soup base, and white pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until vegetables are tender.
  2. Mix margarine and flour in a small bowl until smooth and stir into the simmering soup. Cook for an additional 8–10 minutes until thickened.
  3. Beat egg yolks in a separate bowl and temper them by gradually whisking in hot soup before adding them back to the pot. Heat gently without boiling.
  4. Stir in the cooked rice and diced chicken; cook until heated through.
