Ingredients

  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup plain Greek yogurt (for tzatziki)
  • Minced garlic
  • Fresh dill

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
  2. Pound chicken breasts to about 1/2 inch thick, marinate in the mixture for at least 30 minutes.
  3. Prepare tzatziki by mixing Greek yogurt with grated cucumber, lemon juice, minced garlic, salt, and dill; refrigerate.
  4. Cook rice or quinoa according to package instructions and chop vegetables.
  5. Cook marinated chicken in an air fryer at 380°F for about 10 minutes or pan-fry until golden brown.
  6. Let the chicken rest before slicing it into strips.
  7. Assemble bowls with rice or quinoa as the base, topped with sliced chicken and assorted vegetables; drizzle with tzatziki.
