- 4 small chicken breasts (about 1 1/4 pounds)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cups cooked rice or quinoa
- 2 cups halved grape tomatoes
- 2 cups diced cucumber
- 4 cups shredded romaine lettuce
- 1 cup plain Greek yogurt (for tzatziki)
- Minced garlic
- Fresh dill
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
- Pound chicken breasts to about 1/2 inch thick, marinate in the mixture for at least 30 minutes.
- Prepare tzatziki by mixing Greek yogurt with grated cucumber, lemon juice, minced garlic, salt, and dill; refrigerate.
- Cook rice or quinoa according to package instructions and chop vegetables.
- Cook marinated chicken in an air fryer at 380°F for about 10 minutes or pan-fry until golden brown.
- Let the chicken rest before slicing it into strips.
- Assemble bowls with rice or quinoa as the base, topped with sliced chicken and assorted vegetables; drizzle with tzatziki.
