- 1.5 lb skinless, boneless chicken thighs
- 2 cups cooked jasmine rice
- 15 oz canned chickpeas
- 5 oz fresh spinach
- 8 oz grape tomatoes
- Fresh feta cheese
- Fresh lemon juice
- Olive oil
- Fresh oregano
Instructions
- 1. Season the chicken thighs with oregano, paprika, salt, and red pepper flakes. Heat olive oil in a heavy-bottomed skillet over medium heat. Cook the chicken for 10 minutes until golden brown and cooked through (165°F/74°C). Remove from the skillet.
- 2. In the same skillet, sauté half of the grape tomatoes, garlic, oregano, and salt in olive oil for about 2 minutes. Stir in spinach until wilted. Add the cooked jasmine rice and chickpeas along with lemon juice and remaining tomatoes; mix well.
- 3. In a bowl, combine diced feta cheese with olive oil, lemon juice, and oregano. Mix in half of this mixture into the rice.
- 4. Return the chicken to the skillet to reheat briefly. Top with remaining feta mixture and garnish with fresh oregano before serving.
