  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • Olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken dry; rub with olive oil and season with Italian seasoning, smoked paprika, salt, and pepper.
  3. In a bowl, toss halved potatoes with olive oil, garlic, Parmesan cheese, salt, and pepper.
  4. Place seasoned chicken on one side of the baking sheet and spread potatoes on the other side.
