  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 cloves garlic (minced)
  • ⅓ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix Italian seasoning, smoked paprika, salt, black pepper, and olive oil. Coat the chicken with this mixture.
  3. In another bowl, toss halved potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper.
  4. Spread seasoned potatoes on one side of a large baking sheet and place coated chicken on the other side.
