  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 cloves garlic (minced)
  • ⅓ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine Italian seasoning, smoked paprika, salt, black pepper, and olive oil. Toss chicken in the mixture until well coated.
  3. In another bowl, mix halved potatoes with olive oil, minced garlic, Parmesan cheese, salt, and pepper until evenly coated.
  4. Arrange seasoned chicken in the center of a baking sheet and place potatoes around it.
  5. Bake for about 30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are tender.
  6. Garnish with chopped fresh parsley before serving.
