  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1¼ cups dark chocolate, chopped
  • ¼ cup butter
  • 2 large eggs
  • ¾ cup caster sugar
  • ½ cup demerara sugar
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 160ºC (320ºF) fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water until smooth; stir in vanilla.
  3. In a medium bowl, whisk eggs with caster and demerara sugar until fluffy.
  4. Sift flour, cocoa powder, baking powder, salt, and chocolate chips in another bowl.
  5. Fold melted chocolate into egg mixture gently; then incorporate dry ingredients until just combined.
  6. Scoop tablespoons of batter onto the baking tray, spacing apart. Bake for 12-14 minutes until tops are crackly.
  7. Let cool on the tray before transferring to a wire rack.
