  • 1 and 1/2 teaspoons cornstarch
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 8 ounces (226g) full-fat brick cream cheese, softened to room temperature
  • 3 Tablespoons (43g) unsalted butter, softened to room temperature
  • 1 and 1/4 cups (150g) confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 3 cups (about 400g) assorted sliced fresh fruit

Instructions

  1. Whisk flour, cornstarch, baking powder, and salt in one bowl.
  2. In another bowl, cream together softened butter and sugar; mix in egg and vanilla.
  3. Gradually combine dry ingredients with wet.
  4. Chill the dough for 20 minutes, then press into a greased pizza pan and bake at 350°F for 17–19 minutes until lightly golden. Cool completely.
  5. Beat cream cheese and butter until smooth; add confectioners’ sugar and vanilla.
  6. Spread frosting over the cooled crust and top with sliced fresh fruit.
