- 500g bread flour
- 350ml room temperature water
- 100g active sourdough starter
- 10g salt
- 1 cup fresh blueberries
- 1/3 cup softened cream cheese
- Zest of 1 lemon
- 2 tablespoons granulated sugar
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
Instructions
- Prepare the dough by mixing flour, water, and sourdough starter. Let rest for 30 minutes, then add salt and knead. Allow to rise for 4-6 hours with stretch-and-fold techniques every 30 minutes.
- In another bowl, blend cream cheese, lemon zest, and sugar until smooth.
- Gently fold blueberries into the risen dough during the final stretch-and-fold.
- Shape your loaf by spreading out the dough, adding the cream cheese mixture, rolling it up tightly, and sealing seams.
- Place in a banneton for cold fermentation in the fridge for 8-12 hours.
- Preheat a Dutch oven to 250°C (482°F). Bake the chilled dough covered for 20 minutes, then uncovered at a lower temperature until golden brown.
- Brush warm bread with a honey-lemon glaze after baking.
