  • 1 small yellow onion, diced
  • 2 tablespoons taco seasoning
  • 1 can petite diced tomatoes (14.5 ounces)
  • 1 can refried beans (16 ounces)
  • 1 bag frozen tater tots (16 ounces)
  • 8 ounces sharp cheddar cheese, shredded

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef and diced onion until cooked through; drain excess fat.
  3. Stir in taco seasoning and diced tomatoes; simmer for 5 minutes.
  4. Layer refried beans in the baking dish, followed by tater tots, beef mixture, and top with shredded cheese.
  5. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly.
