  • Vegetable oil, for deep frying
  • 2 teaspoons sesame oil
  • 1/4 teaspoon crushed red pepper
  • 1 tablespoon minced garlic
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/3 cup water
  • 2 teaspoons sesame oil
  • 1/2 tablespoon sesame seeds
  • 1/2 cup cornstarch
  • 1/2 cup flour
  • 2 egg whites
  • 1/2 cup cold seltzer water

Instructions

  1. Whisk together soy sauce, rice vinegar, brown sugar, cornstarch, water, sesame oil, and sesame seeds in a bowl for the sauce.
  2. Prepare the tempura batter by mixing cornstarch and flour with egg whites and cold seltzer water until just combined.
  3. Heat vegetable oil in a deep pot to 350°F (175°C). Coat chicken pieces in tempura batter and fry in batches until golden brown (5-7 minutes). Drain excess oil.
  4. In a wok or skillet, heat sesame oil over medium heat. Sauté minced garlic and crushed red pepper for 30 seconds.
  5. Combine fried chicken with the prepared sauce in the wok and toss to coat.
  6. Serve immediately with rice or vegetables.
