- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/2 cup brown sugar
- 1 tablespoon cornstarch
- 1/3 cup water
- 2 teaspoons sesame oil
- 1/2 tablespoon sesame seeds
- 1/2 cup cornstarch
- 1/2 cup flour
- 2 egg whites
- 1/2 cup cold seltzer water
Instructions
- Whisk together soy sauce, rice vinegar, brown sugar, cornstarch, water, sesame oil, and sesame seeds in a bowl for the sauce.
- Prepare the tempura batter by mixing cornstarch and flour with egg whites and cold seltzer water until just combined.
- Heat vegetable oil in a deep pot to 350°F (175°C). Coat chicken pieces in tempura batter and fry in batches until golden brown (5-7 minutes). Drain excess oil.
