  • 500 g (4 cups) bread flour
  • 7 g (2 1/4 teaspoons) instant yeast
  • 2 teaspoons kosher salt
  • 480 g (2 cups) lukewarm water
  • 6 tablespoons high-quality extra-virgin olive oil (divided)
  • Flaky salt (for topping)
  • Optional: 1 tablespoon chopped rosemary

Instructions

  1. In a large mixing bowl, combine the bread flour, instant yeast, and kosher salt. Make a well in the center and pour in the lukewarm water. Stir until a wet dough forms.
  2. Drizzle 30 g (2 tablespoons) of olive oil over the dough and rub it gently to coat. Cover with plastic wrap and refrigerate for at least 18 hours.
  3. Prepare a 9×13-inch baking pan by spraying it with non-stick spray and drizzling another 30 g (2 tablespoons) of olive oil in the center.
  4. Remove the dough from the fridge, shape it into a ball, and place it in the prepared pan. Allow it to rise in a warm area for 3-4 hours.
  5. Preheat your oven to 425°F (218°C). Create dimples in the dough using your fingers and drizzle with remaining olive oil before sprinkling flaky salt on top.
  6. Bake for 25-30 minutes until golden brown. Let cool briefly before transferring to a wire rack.
