Description

Easy Cheesy Scalloped Potatoes are the ultimate comfort food that combines layers of tender potatoes in a rich, creamy cheese sauce. This dish is perfect for family dinners, holiday gatherings, or cozy weeknight meals.


Ingredients

  • 2 ½ pounds russet or Yukon gold potatoes, thinly sliced
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 2 ½ cups heavy cream
  • 3 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme
  • ½ teaspoon cayenne pepper (optional)
  • 3 cups cheddar cheese, grated
  • 1 tablespoon chives, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Slice the potatoes evenly and set aside.
  3. In a saucepan over medium heat, melt butter and sauté onions until softened. Add garlic and thyme; cook for an additional minute.
  4. Stir in flour and gradually whisk in heavy cream until smooth. Season with salt, pepper, and cayenne if desired.
  5. Mix in 2 cups of cheddar cheese until melted.
  6. Layer half of the sliced potatoes in the baking dish, pour half of the cheese sauce over them, and sprinkle with half of the remaining cheese. Repeat with remaining ingredients.
  7. Cover with foil and bake for 40 minutes. Remove foil, add remaining cheese on top, and bake uncovered for another 20 minutes until golden brown.
