- 2 ½ pounds russet or Yukon gold potatoes, thinly sliced
- ½ onion, chopped
- 3 cloves garlic, minced
- 3 tablespoons butter
- 2 ½ cups heavy cream
- 3 tablespoons all-purpose flour
- Salt and pepper, to taste
- 1 teaspoon fresh thyme
- ½ teaspoon cayenne pepper (optional)
- 3 cups cheddar cheese, grated
- 1 tablespoon chives, chopped (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Slice the potatoes evenly and set aside.
- In a saucepan over medium heat, melt butter and sauté onions until softened. Add garlic and thyme; cook for an additional minute.
- Stir in flour and gradually whisk in heavy cream until smooth. Season with salt, pepper, and cayenne if desired.
- Mix in 2 cups of cheddar cheese until melted.
- Layer half of the sliced potatoes in the baking dish, pour half of the cheese sauce over them, and sprinkle with half of the remaining cheese. Repeat with remaining ingredients.
- Cover with foil and bake for 40 minutes. Remove foil, add remaining cheese on top, and bake uncovered for another 20 minutes until golden brown.
