Ingredients
- 2 pounds Russet or Yukon Gold potatoes
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 3 large egg yolks
- Salt
- Black pepper
Instructions
- Peel and chop the potatoes. Place them in a large pot, cover with cold water, and add salt. Boil until fork-tender (15-20 minutes).
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Drain the potatoes and return them to low heat in the pot to remove excess moisture. Mash until smooth.
- Mix in melted butter, warm cream, Parmesan cheese, salt, pepper, and egg yolks until fully combined.
