  • 2 pounds Russet or Yukon Gold potatoes
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 3 large egg yolks
  • Salt
  • Black pepper

Instructions

  1. Peel and chop the potatoes. Place them in a large pot, cover with cold water, and add salt. Boil until fork-tender (15-20 minutes).
  2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Drain the potatoes and return them to low heat in the pot to remove excess moisture. Mash until smooth.
  4. Mix in melted butter, warm cream, Parmesan cheese, salt, pepper, and egg yolks until fully combined.
  5. Transfer the mixture to a piping bag fitted with a star tip, then pipe mounds onto the baking sheet.
  6. Brush with remaining melted butter and bake for 15-20 minutes until golden brown.
