  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup duck fat (or substitute olive oil)
  • 1 whole head garlic
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon extra-virgin olive oil
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 450°F, placing a large roasting pan inside.
  2. Rinse and boil potatoes in salted water with baking soda until fork-tender (about 25 minutes). Drain and dry thoroughly.
  3. Remove the hot roasting pan from the oven, add duck fat to melt. Roughen potato edges by gently shaking them in a colander, then transfer to the pan and season.
  4. Nestle the garlic head cut-side down among the potatoes and roast for 55-60 minutes, tossing every 20 minutes.
  5. Once done, mash roasted garlic with rosemary and olive oil; mix back into the potatoes and roast for an additional 5 minutes.
