- 4 pounds yellow potatoes
- 2 tablespoons kosher salt
- 1/2 teaspoon baking soda
- 1/4 cup duck fat (or substitute olive oil)
- 1 whole head garlic
- 1 tablespoon finely chopped fresh rosemary
- 1 tablespoon extra-virgin olive oil
- Flaky sea salt for finishing
Instructions
- Preheat your oven to 450°F, placing a large roasting pan inside.
- Rinse and boil potatoes in salted water with baking soda until fork-tender (about 25 minutes). Drain and dry thoroughly.
- Remove the hot roasting pan from the oven, add duck fat to melt. Roughen potato edges by gently shaking them in a colander, then transfer to the pan and season.
- Nestle the garlic head cut-side down among the potatoes and roast for 55-60 minutes, tossing every 20 minutes.
