Ingredients

  • Kosher salt and coarsely ground pepper
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 1 small shallot, minced
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1 cup half and half
  • 1/4 cup fresh lemon juice
  • Fresh parsley or basil for garnish

Instructions

  1. Pat chicken dry; season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes per side until internal temperature reaches 165°F (74°C). Set aside.
  3. In the same skillet, melt butter and sauté shallots until softened. Add garlic; cook until fragrant.
  4. Stir in flour, then add chicken broth and half and half. Bring to a simmer until slightly thickened.
  5. Mix in lemon juice and return chicken to the skillet to heat through.
