  • 1 ¼ pounds sirloin steak, cut into ½-inch cubes
  • 1 pound Yukon gold potatoes, cut into ½-inch cubes
  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • Fresh parsley for garnish

Instructions

  1. Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee or butter.
  2. Once melted, add cubed potatoes with minced garlic, thyme, oregano, salt, and pepper. Cook without stirring for about 2-3 minutes, then stir gently.
  3. Continue cooking while stirring every couple of minutes until golden brown and fork-tender (8-10 minutes). Remove from the pan.
  4. Increase heat to medium-high and add remaining ghee. Once melted, add steak cubes seasoned lightly with salt and pepper. Sear undisturbed for at least 2 minutes.
