  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • 1 jalapeno pepper (diced)
  • 3 cloves garlic (diced)
  • 2 small boneless skinless chicken breasts
  • 5 cups chicken broth
  • 1 can black beans (drained)
  • 1½ cups shredded cheddar cheese
  • ⅓ cup cream cheese

Instructions

  1. In a large pot, heat butter over medium heat. Sauté diced onions and jalapeño until softened. Add garlic and cook for an additional minute.
  2. Stir in chicken broth, black beans, tomato paste, corn, Rotel diced tomatoes, taco seasoning, cumin, cayenne pepper, hot sauce, and chicken. Bring to a gentle bubble.
  3. After 20–25 minutes of simmering, shred the cooked chicken with two forks and return it to the pot.
  4. Reduce heat to low and gradually stir in cheddar cheese and cream cheese until smooth.
  5. Adjust seasonings as needed before serving hot.
