- 1/4 tsp paprika
- 1/4 tsp chili flakes

- 1 medium yellow onion, diced
- 3 large carrots, peeled and diced
- 3 stalks celery, diced
- 4 cloves garlic, minced
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- 1/4 cup all-purpose flour
- 6 cups chicken broth
- 1 cup half-and-half
- 1 tbsp soy sauce
- 1 tbsp hot sauce
- 1 cup long grain white rice, uncooked
- salt and pepper, to taste
- Parmesan cheese, shaved for garnish

Instructions
- Season diced chicken with kosher salt, Italian seasoning, mustard powder, paprika, and chili flakes in a mixing bowl.
- In a large Dutch oven, melt unsalted butter over medium heat; sauté diced onions, carrots, and celery until softened. Add minced garlic.
- Stir in the seasoned chicken; cook until no longer pink.
- Sprinkle flour over the mixture; stir to coat.
- Gradually add chicken broth, half-and-half, soy sauce, and hot sauce; stir well.
- Add uncooked rice; bring to a boil then reduce to low heat and simmer for 15-20 minutes until rice is cooked.
- Taste and adjust seasonings as needed before serving.
