Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 1/2 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (chilled)
  • 8 ounces cream cheese (softened)
  • 3/4 cup fresh-squeezed lemon juice
  • 6 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. For the crust, combine flour, sugar, salt, and chilled butter in a food processor until crumbly. Press evenly into the bottom of the prepared pan and bake for about 10 minutes.
  3. For the filling, beat softened cream cheese and sugar until smooth. Add in flour, lemon juice, eggs, and vanilla; mix until no lumps remain.
  4. Pour the filling over the baked crust and return to the oven for an additional 30 minutes or until set.
  5. Allow to cool at room temperature for 20 minutes before refrigerating for at least 4 hours. Slice into squares and serve dusted with powdered sugar.
