Description

This delightful salad combines tender elbow macaroni with crunchy vegetables, all enveloped in a tangy dressing made from mayonnaise, mustard, and vinegar.   • 3 cups uncooked elbow macaroni
  • 1/2 medium red onion, finely diced
  • 1 rib celery, finely diced
  • 1/2 green bell pepper, finely diced
  • 1 cup mayo
  • 1 tablespoon yellow mustard
  • 3 tablespoons white vinegar
  • Salt and pepper to taste

Instructions

  1. Cook elbow macaroni according to package instructions in salted water. Once cooked, drain and rinse under cool water until fully cooled.
  2. In a separate bowl, combine mayonnaise, mustard, vinegar, salt, pepper, garlic powder, and onion powder; mix until smooth.
  3. Add diced vegetables to the dressing and stir until well-coated.
  4. In a large mixing bowl, combine cooled pasta with half of the dressing mixture; toss gently.
  5. Cover and refrigerate for at least 2 hours. Before serving, add remaining dressing and adjust seasoning as needed.
