Ingredients

  • 1012 hard-boiled eggs
  • ¼ cup + 2 tablespoons mayonnaise
  • ½ teaspoon Dijon mustard
  • 34 teaspoons pickle juice (preferably bread & butter)
  • Paprika for garnish

Instructions

  1. Peel hard-boiled eggs and cut in half lengthwise.
  2. Remove yolks and place in a mixing bowl. Arrange egg whites on a serving platter.
  3. Mash yolks until crumbly, then mix in mayonnaise, Dijon mustard, pickle juice, salt, and pepper until smooth.
  4. Adjust seasoning to taste.
  5. Spoon or pipe the filling back into each egg white half.
  6. Garnish with paprika and serve immediately or chill until ready to serve.
