  • 1 cup old-fashioned rolled oats
  • 4 tbsp melted vegan butter (for the swirl)
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon (for the swirl)
  • 3/4 cup powdered sugar (optional)
  • 2 tbsp melted vegan butter (optional)
  • 2 oz softened vegan cream cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, whisk together mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
  3. In another bowl, mix baking powder, baking soda, cinnamon, salt, flour, and rolled oats.
  4. Combine wet and dry ingredients gently using a rubber spatula until just mixed.
  5. For the cinnamon swirl topping: mix melted vegan butter, brown sugar, and cinnamon in a small bowl.
  6. Pour half the batter into the loaf pan; drizzle half the swirl mixture on top. Repeat with remaining batter and swirl.
  7. Bake for about 45 minutes or until a toothpick comes out clean.
