Ingredients
- 1 cup graham cracker crumbs
- 4 tbsp butter (melted)
- 10 oz semi-sweet chocolate (chopped)
- 16 oz cream cheese (softened)
- 2 cups heavy cream (room temperature)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2/3 cup creamy peanut butter
Instructions
- Prepare 12 baking cups or mini springform pans on a flat surface.
- In a medium bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of each cup using a shot glass to form the crust. Chill in the fridge.
- Melt semi-sweet chocolate in a microwave-safe bowl until smooth and cool slightly.
- In another bowl, whisk cream cheese, powdered sugar, and vanilla using an electric mixer until smooth. Add room temperature heavy cream and mix until thickened.
- Fold melted chocolate into two-thirds of the cream cheese mixture; spread it over the chilled crusts.
- Mix creamy peanut butter into the reserved cheesecake mixture and spread it over the chocolate layer. Return to fridge.
- Melt additional chocolate with heavy cream for ganache; pour on top of each cheesecake.
- Garnish with chopped peanuts and mini chocolate chips before serving.
