  • 1.5 lbs diced chicken breast
  • 1 large zucchini
  • ½ yellow onion
  • 1 pint grape tomatoes
  • 1.5 cups basmati rice
  • 3 cups chicken stock
  • ¼ cup feta cheese
  • 2 tablespoons Greek seasoning
  • Pickled red onions
  • Tzatziki sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix smoked paprika, seasoning salt, turmeric, and cayenne.
  3. Pickle the red onions by combining vinegar, sugar, and salt in a bowl; microwave until sugar dissolves then add onions.
  4. In a casserole dish, layer diced chicken and sprinkle with half the spice mix and Greek seasoning.
  5. Layer rice, zucchini, and grape tomatoes over the chicken.
  6. Pour seasoned chicken stock over the layers and top with feta cheese and lemon wedges.
  7. Cover with foil and bake for 40 minutes; uncover and bake an additional 10-20 minutes until rice is tender.
  8. Fluff casserole before serving and top with extra feta, pickled onions, parsley, tzatziki sauce, and garlic dip.
