  • Fresh lemon juice
  • Salt
  • 1 teaspoon lemon pepper seasoning
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • ¼ teaspoon red pepper flakes
  • 1 ½ teaspoons salt, divided
  • 3 cups chicken broth
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons crispy toasted breadcrumbs (optional)

Instructions

  1. Season chicken strips with salt, lemon pepper seasoning, and garlic powder. Sauté in olive oil over medium heat until golden brown (3-4 minutes per side). Remove and keep warm.
  2. In the same skillet, melt butter and sauté minced garlic with red pepper flakes. Add white wine and reduce by half.
  3. Stir in rice, chicken broth, and salt; bring to a boil then simmer covered for 15-20 minutes until rice is tender.
  4. Mix in Parmesan cheese, return chicken to skillet, drizzle with reserved sauce, cover for 5 minutes to meld flavors. Garnish and serve.
