  • 1 1/2 lb chicken breast
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 3 cups heavy cream
  • 12 oz shredded parmesan cheese
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp gluten-free 1:1 flour
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil pasta as per package instructions for al dente.
  2. Mix seasonings (paprika, oregano, garlic powder, thyme, salt, pepper) in a bowl.
  3. Pound chicken to an even thickness and coat both sides with seasoning.
  4. Sear chicken in olive oil over medium heat until golden brown (about 5 minutes per side).
  5. Lower heat, cover the skillet, and cook until chicken is done (internal temp of 165°F).
  6. In the same skillet, melt butter; add dry shallots and spices; simmer for one minute.
  7. Stir in gluten-free flour, then add chicken broth and heavy cream; whisk until smooth.
  8. Mix in shredded parmesan until melted.
  9. Combine cooked pasta with the sauce; adjust consistency with reserved pasta water if needed.
  10. Slice the chicken and toss it back into the pasta before serving.
