  • 4 boneless chicken breasts
  • 8 slices of ham
  • 8 slices of Swiss cheese
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups Panko breadcrumbs
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon mustard paste
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup grated Swiss cheese
  • 1/2 cup grated sharp cheddar cheese
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the chicken by slicing and pounding it thinly. Roll each piece with ham and Swiss cheese inside and refrigerate for 1-2 hours.
  2. Coat the chicken rolls in flour, dip in beaten eggs, and then roll in breadcrumbs.
  3. Bake at 350°F (177°C) for 20-25 minutes until golden brown.
  4. Meanwhile, make the cheese sauce by creating a roux with olive oil and butter; add milk gradually until thickened; stir in cheeses until smooth.
  5. Slice the baked chicken into pinwheels and drizzle with warm cheese sauce before serving.
