Ingredients
- 2 boneless, skinless chicken breasts (or 2 cups rotisserie chicken)
- 2½ cups chicken broth
- 1¼ cups uncooked white long-grain rice
- 2 cups fresh broccoli florets
- 10.5 oz condensed cream of chicken soup
- ½ cup milk
- 2 cups shredded cheddar cheese
- 1 cup crushed Ritz crackers
- Butter for cooking and topping
Instructions
- Preheat your oven to 350°F (175°C). Cut chicken into bite-sized pieces and season with Italian seasoning, salt, and pepper.
- In a large pot, heat butter over medium heat. Cook the chicken until golden brown (about 5 minutes), then set aside.
- In the same pot, combine chicken broth, olive oil, and rice; bring to a boil. Reduce heat and simmer for 6 minutes. Add broccoli and cook covered for an additional 9 minutes or until rice is tender.
- Stir in cooked chicken, cream of chicken soup, milk, sour cream, optional seasonings, and half of the cheese until well combined.
- Transfer mixture to a greased casserole dish; top with remaining cheese and bake covered for 15 minutes.
- Mix melted butter with crushed Ritz crackers; sprinkle over casserole and bake uncovered for another 10 minutes until golden brown.
