  • 2 boneless, skinless chicken breasts (or 2 cups rotisserie chicken)
  • 2½ cups chicken broth
  • 1¼ cups uncooked white long-grain rice
  • 2 cups fresh broccoli florets
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers
  • Butter for cooking and topping

Instructions

  1. Preheat your oven to 350°F (175°C). Cut chicken into bite-sized pieces and season with Italian seasoning, salt, and pepper.
  2. In a large pot, heat butter over medium heat. Cook the chicken until golden brown (about 5 minutes), then set aside.
  3. In the same pot, combine chicken broth, olive oil, and rice; bring to a boil. Reduce heat and simmer for 6 minutes. Add broccoli and cook covered for an additional 9 minutes or until rice is tender.
  4. Stir in cooked chicken, cream of chicken soup, milk, sour cream, optional seasonings, and half of the cheese until well combined.
  5. Transfer mixture to a greased casserole dish; top with remaining cheese and bake covered for 15 minutes.
  6. Mix melted butter with crushed Ritz crackers; sprinkle over casserole and bake uncovered for another 10 minutes until golden brown.
  7. Allow to cool for five minutes before serving.
