  • 2 tbsp butter
  • 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 1 tsp Italian seasoning
  • 2½ cups chicken broth
  • 1¼ cups white long-grain rice (uncooked)
  • 2 cups fresh broccoli florets
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt butter and cook chicken seasoned with Italian seasoning until no longer pink. Remove from heat.
  3. In a mixing bowl, combine cream of chicken soup, milk, sour cream, and half of the cheddar cheese until smooth. Stir in rice and broth.
  4. Fold in broccoli and pour mixture back into the skillet or a baking dish. Top with remaining cheese.
  5. Sprinkle crushed Ritz crackers on top and drizzle with melted butter.
  6. Bake for about 50 minutes until bubbly and golden brown.
