Ingredients
- 2 tbsp butter
- 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
- 1 tsp Italian seasoning
- 2½ cups chicken broth
- 1¼ cups white long-grain rice (uncooked)
- 2 cups fresh broccoli florets
- 10.5 oz condensed cream of chicken soup
- ½ cup milk
- 2 cups shredded cheddar cheese (divided)
- 1 cup crushed Ritz crackers
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, melt butter and cook chicken seasoned with Italian seasoning until no longer pink. Remove from heat.
- In a mixing bowl, combine cream of chicken soup, milk, sour cream, and half of the cheddar cheese until smooth. Stir in rice and broth.
- Fold in broccoli and pour mixture back into the skillet or a baking dish. Top with remaining cheese.
- Sprinkle crushed Ritz crackers on top and drizzle with melted butter.
