  • 1/2 cup water
  • 1 (4-ounce) can diced green chilies
  • 1 (15-ounce) can nacho cheese sauce
  • 1 (5.6-ounce) package Knorr® Mexican rice (or similar)
  • 3 cups Colby jack cheese, shredded
  • 1 (3.5-ounce) package Santa Fe-style tortilla strips
  • 1 cup sour cream
  • 10 large flour tortillas, burrito size
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large skillet over medium heat, cook ground beef with diced onions and seasonings until browned. Add garlic and green chilies; cook for an additional 2 minutes.
  2. Prepare Mexican rice according to package instructions and set aside.
  3. Heat nacho cheese sauce in a saucepan over low heat until warm.
  4. Warm tortillas to make them pliable. Layer each tortilla with beef mixture, nacho cheese sauce, rice, shredded cheese, sour cream, and tortilla strips.
