  • 1 head cauliflower (about 5 cups, chopped into florets)
  • 2 slices bacon (chopped)
  • 1 tablespoon olive oil
  • ¼ cup yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup almond milk (or milk of choice)
  • 2 tablespoons all-purpose flour (or tapioca flour for gluten-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • ½ teaspoon salt
  • Chopped chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside, reserving grease.
  3. Boil water in a saucepan; add cauliflower florets and cook for about 5 minutes until tender. Drain and set aside.
  4. In the same skillet, add olive oil, diced onion, and minced garlic; sauté for 3–5 minutes until soft.
  5. Whisk together almond milk and flour in a bowl; pour into the skillet and bring to a low boil.
  6. Stir in cheddar cheese, parmesan cheese, and salt until smooth. Fold in the drained cauliflower until well coated.
  7. Transfer the mixture to an 8×8-inch baking dish; sprinkle cooked bacon on top.
  8. Bake for about 20 minutes or until bubbly and golden.
  9. Garnish with chopped chives before serving.
