Description

Cauliflower Shawarma Bowls are a vibrant and nourishing meal that brings together crispy chickpeas and roasted cauliflower, all topped with a creamy Green Tahini Sauce. This plant-based dish is not only vegan and gluten-free but also packed with flavors that make it perfect for meal prep lunches or quick weeknight dinners.   • 1 large head cauliflower, chopped into florets
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • 2 cups cooked white basmati rice (or grain of choice)
  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. curry powder
  • 2 tsp. paprika
  • 1 tsp. ground cumin
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • For Green Tahini Sauce: 1/4 cup tahini, 1/2 cup fresh cilantro leaves, 1/2 cup fresh parsley leaves, 2 Tbsp. fresh lemon juice, 1/2 tsp. minced fresh garlic, 1/4 tsp. ground cumin, 1/4 tsp. kosher salt, 1/4 tsp. black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine spices in a small bowl. Toss cauliflower with 2 Tbsp olive oil and chickpeas with remaining oil; coat well with spices.
  3. Spread on baking sheets and roast for 30 minutes (shaking chickpeas halfway).
  4. Blend sauce ingredients until smooth, adding warm water as needed.
  5. Serve by layering rice in bowls and topping with roasted vegetables; drizzle with tahini sauce.
