- 150g granulated sugar

- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- ½ teaspoon salt
- 230g freshly shredded carrot
- For Frosting: 460g cream cheese, 150g mascarpone, 60g powdered sugar, ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 175°C (350°F) and prepare your baking pan.
- In one bowl, mix together eggs, oil, granulated sugar, and brown sugar until smooth using an electric mixer.
- In another bowl, combine sifted flour, baking powder, baking soda, cinnamon, and salt. Gradually add to wet mixture; fold in shredded carrots.
- Bake for approximately 25 minutes or until a toothpick comes out clean. Allow cooling before cutting into circles.
- For the frosting, beat room temperature cream cheese and mascarpone with powdered sugar and vanilla until fluffy.
