  • 1 cup light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar. Mix in the egg and vanilla extract until creamy.
  3. In another bowl, whisk flour, cinnamon, baking powder, and salt. Gradually add to wet ingredients, folding in shredded carrots.
  4. Pour batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  5. While baking, mix cream cheese with granulated sugar, egg yolk, and vanilla until smooth.
  6. Spread cream cheese mixture over baked base and return to the oven for an additional 15 minutes or until set.
