- 1–3 tbsp Cajun seasoning
- 1 tsp salt
- 1 tbsp olive oil
- ½ tbsp butter
- 2 tbsp chopped sun-dried tomatoes
- 1 tbsp tomato paste
- 1 cup shredded spinach
- 3 tbsp grated parmesan cheese
Instructions
- Season chicken strips with Cajun seasoning and salt. In a large chef's pan, heat olive oil and butter over medium heat. Cook the chicken for about 5-7 minutes until browned.
- Add diced onion, minced garlic, sun-dried tomatoes, and tomato paste to the pan; cook until onions are translucent (about 5 minutes).
- Stir in orzo pasta and chicken broth; bring to a simmer. Cover and cook for about 20 minutes, stirring occasionally.
- Once the orzo is nearly tender, add spinach and stir until wilted.
- Mix in heavy cream and Parmesan cheese until combined. Adjust seasoning if necessary before serving.
