  • 2 cups rotisserie chicken (finely diced)
  • 4 ounces cream cheese (softened)
  • ¼ cup buffalo sauce
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)
  • 1 packet dry ranch seasoning mix
  • 8 egg roll wrappers
  • Cooking spray
  • Ranch or blue cheese dressing for serving

Instructions

  1. In a large mixing bowl, combine the rotisserie chicken, cream cheese, buffalo sauce, cheddar cheese, mozzarella cheese, and ranch seasoning. Mix until well combined.
  2. Take an egg roll wrapper and place about ⅓ cup of the chicken mixture in the center. Wet the edges with water.
  3. Fold up the bottom corner over the filling and tuck in the sides. Roll tightly to seal.
  4. Preheat your air fryer to 400°F. Place the egg rolls in the basket, spraying with cooking spray on top.
  5. Air fry for 3-4 minutes; flip and spray again before cooking for another 3-4 minutes until golden brown.
  6. Serve hot with ranch or blue cheese dressing.
